P.S I already tried cooking.
We are on our fiber journey, below is my favorite smoothie combo to make sure we're getting a good dose of fiber each day. Eyeball amounts depending on taste preference.
*the night before, I will soak 1 tbsp of chia seeds in 3 tbsp of water*
- strawberries & raspberries
- overnight soaked chia seeds
- your choice of dairy/non-dairy milk
- plain greek yogurt
- honey
- protein powder of choice - vanilla flavored
*if you really want the fiber boost, add 2 tsp of benefiber or any other powdered fiber supplement per serving. With the benefiber, I'd estimate around 12g of fiber -- without is around 8-9!
*Remember to stay extra hydrated if you're increasing fiber intake!*
Fiber is getting their day in the sun on social media right now, and adding fiber rich foods to my diet has improved my digestion and overall health so much over the past 3 years. I'll make sure to post some of my favorite recipes that feature fiber very soon!
Twice Baked Sweet Potatoes
- 4 small sweet potatoes
- white miso paste
- your favorite seasonings (I did garlic/paprika/salt/pepper/chili flakes)
- 1 container of greek yogurt
> poke holes in taters and cook for ~50 minutes
> scoop out the insides of the potatoes, making sure 2 of them can we restuffed later
> mix all ingredients and then put back in the 2 potatoes skins -- you want it to stay a little lumpy
> bake at 375 for 20-25 minutes
> enjoy!
High Protein Buffalo Chicken Dip
Ingredients
- 1/3 Cup of Whole Milk Plain Greek Yogurt
- 1/2 Cup Shredded Chicken
- Eyeball Buffalo Sauce
- Shredded Cheddar Cheese or Blue Cheese Crumbles
- Half a Package of Ranch Seasoning Mix
- Salt & Pepper
Mix & Enjoy!
Goes great with...Naan Bread, Chips, Crackers, Celery, Carrots

Anyways, here's the recipe for Thai Chili Coconut Smashed Pork Patties from Hello Fresh - > here
Some tips:
* If you're not a pork eater, I'm fairly sure this would also taste really good with ground chicken - may need to adjust cooking time slightly, but would still be delicious.
* Finding "sweet Thai chili sauce" is a little iffy in my town - but lo and behold there is a PF Changs & Panda Express brand version at walmart that works just fine - > used about a tablespoon and a half.
* Online recipe doesn't give measurements for coconut milk - > I use 1/4 cup for rice, and 1/4 cup - 1/2 cup for the sauce.
* Coconut rice is so delicious if you eat rice a lot; it's a fun way to mix it up a little without all that much extra effort involved.
