A month or so ago, Disney bought the rights to Star Wars (along with the rest of Lucasfilm), and it announced that it plans on making new movies. I assume that at least three of these movies will be episodes 7, 8, and 9, but I'm hoping they go beyond that.
I think what I would really like to see are three movies that happen in parallel with episodes 4, 5, and 6. For example, in Star Wars: A New Hope, Grand Moff Tarkin mentioned that the Senate had been dissolved. This was kind of a throwaway line at the time, but with episodes 1, 2, and 3, it now means a lot more. We actually know what the Senate looks like and its importance.
So, wouldn't it be cool if there was a movie where we get to see the dissolution of the Senate? See the Emperor march in and literally dissolve each Senator?
Plus, the original movies were more about the rise of the rebel alliance rather than the fall of the empire. Showing the decline of the empire as it happens on Coruscant (the Imperial capital) could be really cool.
It'd be a lot like what Orson Scott Card did with Bean and Ender in the Ender's Shadow series; that is, giving a totally different perspective to events we already know that makes us see those events in a totally different way. And with George Lucas out of the way, they might actually be good.
