I always think of the scene in The Lion King when Simba returns and it starts raining again. It's like the opposite of the usual rain effect. (It's similar in The Great Gatsby; the climax happens (or starts to happen?) on the hottest day of the year.) I also really like the episode of Saiyuki ("Storms") in which you learn a little more about what the main characters think about the rain. It was good.
I honestly can't say I've given much thought to the weather in my stories. Heh.
