I think in all reality Daniel if Jonathan accepted Cole's offer and it killed Jonathan to lose his powers Daniel would just beat him he would probably kill Cole on the spot. I mean Jonathan helped Daniel try to find Chris's ghost which would have created a close bond between the two. So if Daniel didn't kill Cole he would at least leave Cole mortally wounded.

Jonathan's not going to die when Cole takes his powers, but later when he's trying to protect the others, or something. Oh, and Cole's immortality only includes not aging, so it's perfectly possible to beat him up, if you can catch him

Oh, and I have a question about Cole's ability. What if the person's another species? Like, say if he tried to take the traits of a vampire. How would that work?
I'm not sure.. I didn't really think about that when I created him. Hmm.. Well, I think that he would have a 50% shot of becoming a vampire, and a 50% shot of nothing at all happening. Sounds about fair, right? xD
