Spoiler
I'm not the best at grammar so please feel free to nit pick!

When I was young,
My thoughts rolled around like tumbleweed.
In a vast expanse of land made of dreams and wishes.

Light shines on my most happiest musings and memories.
Emotions of those times come tumbling back at me.
Just as my tumbleweeds use to do.

Joy,
Despair,
Intent,
Nervousness,
Embarrassment.

But most of all,
I remember the giggles and blushes,
The feeling of not knowing what to say in front of him.
The incredulous smile that spreads across my face when he says something nice.

The overwhelming heat that spreads across my body when I realized that I noticed that he wore his gray and white striped shirt that day.
The hidden glances at him across church on Sunday when I think he’s not looking.
The giddiness when he asked if I was okay after I coughed a few times.
And the feeling of him handing me gummy worms when he only had a few.

These are the things I hold dearly and wish to remember,
Especially this one: Those were the best gummy worms I ever had.

Intensely.

First off, I'd like to say that this is a cute poem. I really love the story behind it. Secondly, I'd like to say that the form of your poem is rather odd. Not many people write in this form but I think you actually made it work. Anyway, let's get on to the corrections.

When I was young,
My thoughts rolled around like tumbleweed. the period should be a comma since you're continuing the line through to the next one.
In a vast expanse of land made of dreams and wishes.

Light shines on my most happiest musings and memories.
Emotions of those times come tumbling back at me.
Just as my tumbleweeds use to do. -love this stanza.

Joy,
Despair,
Intent,
Nervousness,
Embarrassment.

But most of all,
I remember the giggles and blushes,
The feeling of not knowing what to say in front of him.
The incredulous smile that spreads across my face when he says something nice. -this is the most amusing part for me.

The overwhelming heat that spreads across my body when I realized that I noticed that he wore his gray and white striped shirt that day.
The hidden glances at him across church on Sunday when I think he’s not looking. 'think' should be 'thought' because the whole sentence is in past tense. You have to be careful about changing the tenses of the sentence.
The giddiness when he asked if I was okay after I coughed a few times.
And the feeling of him handing me gummy worms when he only had a few.
-these are my favourite lines!

These are the things I hold dearly and wish to remember,
Especially this one: Those were the best gummy worms I ever had.
A very solid ending to a good poem.

That's all. I just wanted to say that this is really sweet. :) Happy writing!

Awww, this is really sweet! And I agree, the form of the poem is different but it fits. Great job.

This was really cute, but I do have some nit picks.
When I was young,
My thoughts rolled around like tumbleweeds.
In a vast expanse of land made of dreams and wishes.

Light shines on my most happiest musings and memories. You don't need most here.
Emotions of those times come tumbling back at me.
Just as my tumbleweeds use to do. used to.

Joy,
Despair,
Intent,Not sure exactly where you wanted to go with this. I get what you're trying to say, but try either intentions or attentive. Either describing the action or the person.
Nervousness,
Embarrassment.

But most of all,
I remember the giggles and blushes,
The feeling of not knowing what to say in front of him.
The incredulous smile that spreads across my face when he says something nice. If you're remembering something, use spread and said, past tense.

The overwhelming heat that spreads across my body when I realized that I noticed that he wore his gray and white striped shirt that day. spread. Again, past tense.
The hidden glances at him across church on Sunday when I think he’s not looking.thought he wasn't looking
The giddiness when he asked if I was okay after I coughed a few times.
And the feeling of him handing me gummy worms when he only had a few.

These are the things I hold dearly and wish to remember,
Especially this one: Those were the best gummy worms I ever had.

This was a really good poem, though. Keep it up!

This is an interesting poem. Everyone has already pointed out most of my nitpicks, so I'll just say this is cute. I especially liked the ending! I think this poem was relatable, too; I certainly understood the part about looking at him in church. Nice work with this. Never stop writing!
