So I was wondering, does anybody know of any good soundtracks to listen to? Something operatic or orchestral would be a lot better than metal, by the way.

I saw this and thought yes! and about to list out all of my symphonic metal albums but the noticed you weren't after metal stuff .
Not much I can offer here aside a few artists/albums who are listed as metal but have some of the sort thing you're after.
First try out Trans-Siberian Orchestra - some really good instrumental stuff. Also there's the Folk Metal band called Eluveitie, the majority of their stuff is very heavy but they have one album, Evocation I: The Arcane Dominion which is entirely acoustic, very fantasy-esque.
Not much else I can think of off the top of my head at the moment, I'll have to scour my collection. I imagine a could place to start would be to look through the soundtracks of various fantasy RPGs. Stuff like Dragon Age has very good fantasy type music.

Hmm... You could try E.S. Posthumus. They create soundtrack-style music, and some give the impression of fantasy...your mileage may vary though. Their second album is a lot more 'metal'-ish.
I was going to recommend ESP as well. Previous poster beat me. XD Midnight Syndicate and Nox Arcana are pretty good. They have what I'd call a spooky, haunted-house-movie sound, if that's anywhere near what you're looking for. It's mostly orchestral, but you'll hear sound effects and organs thrown in every few songs.
