Ultimately, this bet was to help you get started with writing a story; whether or not you won. It seems like you were more interested in winning the bet than actually writing something for the sake of writing it. So, in that sense the bet failed.

There was nothing against the rules regarding that.

Nah. He's using Microsoft Word, and that counts all the words, regardless of spelling.

I even checked it on other word counters just to see.

None of them are 2500 words! Grif wins.

Haha, it's never a good idea to just barely hit the word count for this very reason. It doesn't matter what you're writing! It's always safest to go beyond the word limit by at least 50-100 words. (I usually aim for a hundred+) That way if you did miss something, you've got a cushion word limit to keep you in the safe zone still.

Jabber -- I believe I had to do exactly 2500 words each chapter. Going above that would cause a loss too, I think?

I think Grif wouldn't have minded 2501 words, actually.

In any case, I think this is worthy to have a REMATCH.
