oh my GOSH are those aesthetic Wolfi! I got a recipe book from my church as a wedding gift from the ladies; and there's an awesome recipe for Italian Wedding soup in there with the little meatballs and orzo pasta it's good! will try to find it!
VERY BASIC BUT YUM TOMATO SOUP RECIPE
My mom has been gardening this Summer and is currently on an 8 week no solid foods diet due to dental surgery; so has been experimenting with different garden soups!
Here's a favorite:Ingredients:
-> 4-6 large garden tomatoes (or an equivalent amount of smaller tomatoes, Roma tomatoes would also work nicely)
-> 1 red pepper
-> 1/2 onion (use less or omit if preferred)
-> 1 clove of garlic
-> 1 cup chicken broth
-> 1/4 cup heavy whipping cream
-> Olive oil for cooking
-> 1 tsp sugar (optional, for a sweeter soup, I prefer a little sugar in my tomato soup as it cuts down on acidity!)
-> Spices: Salt, pepper, paprika, garlic powder, oregano (to taste)
-> Optional Adds: Parmesan, Fresh Basil, Red-Pepper FlakesInstructions:
Cook the Vegetables:
Chop the tomatoes, red pepper, and onion.
Stovetop Method: In a large pan with a little olive oil, cook the vegetables in the following order until softened: onion, then red pepper, then tomatoes. Mince the garlic and add it towards the end of the cooking time, sautéing for just a minute until fragrant to prevent burning.
Oven Method: Toss the chopped onion, red pepper, and tomatoes with olive oil and roast at 400* F (200* C) for 20-30 minutes, or until softened. It is recommended to mince the garlic and cook it separately in a pan on the stove to avoid burning it in the oven.
Combine and Boil:
Transfer the cooked vegetables to a large pot.
Pour in the chicken broth, stir to combine, and bring the mixture to a boil.
Blend:
Once boiling, reduce the heat.
Carefully use an immersion blender (hand-blender) to blend the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a regular blender and blend until smooth, then return it to the pot.
Finish and Season:
Stir in the heavy whipping cream.
Season to taste with salt, pepper, paprika, garlic powder, and oregano.
If you prefer a sweeter soup, add the teaspoon of sugar and stir until dissolved. Serve warm.
Optional Customizations: A little Parmesan on top is good, if you have fresh basil that is also good, and if you like a little heat some red-pepper flakes are also good! If you prefer you soup thinner or thicker, you can adjust the amount of chicken broth.
