Anyway- I was wondering Dante- do our characters have jobs in the human world? A cover of sorts?

If there members of the pack yes, Vamps shouldn't because there only just coming into town.

Is it possible for me to do a vampire priest if no one else claims the spot? And a quick question, when vamps are bitten and changed, what is the process they go through? Like 3 days of pain as in twilight, or simply wake the next morning ready for action?

I've claimed High Priest, but what your talking about is a Pharamoaned, they get bitten and then fed blood of a vampire. The process is a full twenty four hours of pain. It'll feel like there being torn apart limb by limb.
