I'm a big proponent of breakfast burritos. Honestly, it's so easy. Either scramble up some eggs and make a fried egg, and wrap it up in a burrito with salsa, ripe avocado, and some cheese. For the cheese, I either use the Boursin cheese spread, a flavoured cream cheese, or shredded cheese. Shredded pepperjack is nice because it adds a good kick.
I also like curried cabbage. This is really easy: get some cabbage and some curry powder and plain yoghurt and water, and cook it all together in the pan until the curry powder and yoghurt make a nice creamy sauce and the cabbage is soft and cooked down.

I rock a quick & easy fried rice (though we have a rice cooker, which takes SO MUCH PAIN out of cooking rice and it's perfect every time). I basically just cook up however much rice I'd like in a rice cooker and when it's nearly done, I'll saute up whatever is going in it (usually just frozen mixed peas & carrots, but if we have leftover meat of some kind I'll chop that up and warm it through), scramble some egg right into the pan, and then dump in the rice. Add some sesame oil and a dash of rice vinegar, then drown it in soy sauce. Fry for a few more minutes and eat!
In college, though, my go to was pasta with sauted chicken, red bell pepper, and asparagus. For the sauce I'd go with heavy cream (I know, this sounds really healthy), a little butter, parmesan cheese and a bunch of whatever spices seemed good (usually garlic powder and oregano!).
Neither of those are very healthy. My partner and I meal plan now, so we don't usually get caught needing to do something quick or easy. -
