I might as well leave the first lengthy reply. XD
Even after seven volumes, I believe the best fight in terms of team coordination and representation of the show as a whole is the RWBY-vs-Nevermore/JNPR-vs-Deathstalker battle in V01E08 Players and Pieces. It's over the top and exciting and exactly what fans want to see.
After that, I'd say the food fight in V02E01 Best Day Ever is just ridiculous — in logic and awesomeness! It's clear that Monty just wanted to have fun, and I don't think anyone can say that fight wasn't fun to watch.
From the later volumes, I think— oh, spoiler alert if you're not caught up that far:Spoiler
—the part of the battle against Adam in V06E11 The Lady in the Shoe, specifically when Adam fights Yang, has some really cool elements in it! I have reason to believe this might partially have been animated by Monty's protégé, as there was intended to be a battle between Adam, Blake, and Yang during Volume 3 when he first encountered them, and if that's the case, it's a shame it wasn't used then.
The camera angles in this particular fight jump like they're on drugs, and the way Adam's character has been mangled by then unfortunately lowers the overall value of the battle. It's also pretty controversial, in that Adam, so far, has been able to kill any Huntsman/Huntress that pursued him, yet he loses to two teenagers who only completed their first year at Beacon. A good counterpoint is that Blake seems on par with Adam in the Black Trailer, so it's not entirely farfetched, but his overall depiction, especially in Volume 3, makes him seem too powerful to be defeated so "easily". But hey, he's clearly unhinged, and anyone who has any fighting experience (in real life or games) knows that mindset plays a significant role in your success.
Oh, and there's one more! I shan't elaborate just now, so another spoiler won't be necessary, but the second battle in V07E11 Gravity is brilliant. The first battle is epic too, but the second is... probably my favourite in the later volumes, huh. I wish I'd realised this sooner. If nobody else responds in a year or so, I'll delve into more detail. XD
