Dessert Recipes

  1. Who doesn't love sinking into good dessert? Be it dessert in place of main course or just something used to satiate you sweet tooth. If you remember borrowing the recipe from a source, try to link it so we can roll around in other recipes like it!
  2. And, I'm going to begin with this really easy Indian dessert which I made for Diwali.

    Payasam/Kheer

    :]Ingredients
    Vermicelli (small tiny pieces) - 1/2 cup
    Whole milk - 1 litre (most likely won't use all of it)
    Sugar - 1/2 cup (Again, may not use all of it)
    Cardamom powder - 1 tsp
    Cashewnuts - however many you want! (If you like them, take a good 1/4 cup full ;) )
    Butter - 1 tsp

    Method

    1. In a flat iron skillet, melt 3/4 tsp butter; and roast the vermicelli in it until it's sort of golden-brown. Ensure you don't leave the vermicelli just like that on the skillet - keep flippin them around with your spatula - you don't want to burn them. (It usually takes me under 5 mins). Be careful not to char them - a strong burnt smell is indicative of this.

    2. Let this cool on a plate.

    3. In the same skillet, melt the rest of the butter and roast your cashewnuts until it gives a good smell. (~2-3 mins)

    4. Take 1/2 litre of the milk in a deep pan (or saucepan or something), and add sugar (1/4 cup) and cardamom powder.

    5. When it starts to boil (make sure you don't let it boil off and drip outside the pan), add the vermicelli and cashewnuts.

    6. Keep mixing this for about 3-5 mins.

    7. Do a quick taste check to see if you want more sugar and/or cardamom powder. Adjust accordingly.

    8. Again, the thickness consistency is up to you - you can more milk if you want something that you can drink from a glass or if you want a more spoon-able consistency.


    10. Turn off the heat and let it stand until the contents reach room temperature.

    11. Refrigerate it and serve cold!

    (You can also add raisins if you want. I dislike raisins. A pinch of safron makes it gorgeous, but I avoid it because of expensive saffron.)

  4. 3-2-1 Cake

    Cake presents us with three main problems.
    1. It's a pain to make in the middle of the week.
    2. It disappears too quickly.
    3. Icing makes us fat.

    And out of those problems rises this recipe I got from a weight watchers cook book and then slowly started editing and perfecting.
    You Will Need:
    1 box of angel food cake mix
    1 box of any flavor of cake
    (I've found either yellow or chocolate works best)
    1 gallon ziplock or several smaller bags

    Mix the dry ingredients together in a glass bowl and put into plastic bags.

    When you want cake, this is what you do.
    1 mug
    3 tablespoons of mix
    2 tablespoons of water

    Don't spray mug with Pam. Mix water and dry mix.
    Microwave for 1 minute.
    Top with fruit and/or cool whip.

    If you want chocolate-ish cool whip icing, 1 tbsp of hot chocolate mix to 4 tbsp of cool whip is a good ratio.
