Chicken Korma
this is kinda a mix of two recipies I have.
2 tsbps vegetable/sunflower oil
1kg of cubed chicken breast
200 ml greek style yogurt/fromage blanc
1 tsbp of grated fresh ginger
2 cloves of garlic, minced
2 finely chopped medium onions
(1 green chilli - optional - my mum's allergic, so...)
1 tsbp ground coriander
1 tsp tumeric
1 tsp garam masala
250 ml coconut cream/milk
300 ml chicken stock
2 tsbps ground almonds
salt
lemon juice
2 diced tomatoes
-Mix the chicken with the ginger, garlic and yogurt/fromage blanc and leave to marinade overnight (or for 12 hours).
-Heat the oil in a large frying pan. Add the onions, (green chilli), ground coriander, tumeric and garam masala and stir fry for 2-3 minutes.
-Remove the chicken from the marinade and fry until golden.
-Then add the marinade, coconut cream/milk, chicken stock and stir together.
-Bring to the boil, stirring in the ground almonds. Lower the heat, cover the pan and leave to simmer for 30-40 minutes or until the chicken is cooked through.
-Remove from heat and add lemon juice and salt, then top with the diced tomatoes.
Serve with rice or chapattis or both, depending on how you feel.
(alternatively, if you don't have 12 hours, first heat up the oil and fry off the chicken until golden, then add the ginger and garlic to the second stage (fry off onions, etc.))
(this was actually pretty hard to write up, especially hindered by the fact that I forgot how to type ckenc... or chicken.
